Thermophilic Yogurt Culture YC-X11 is a granular culture and is available in sachets containing 50DCU. It is designed to form a mild tasting product and is suitable for cup-set, stirred and drinking yogurts.
The bacterial strains present contain: Lactobacillius delbrueckii subsp. bulgaricus and Streptococcus thermophilus and these have been carefully selected to ensure quick acidification whilst providing a really mild taste.
Storage: Shelf life is at least 12 months when stored at -20°C (-4°F)
Directions for use: add the contents of the sachet directly to the pasteurised milk and agitate at a slow speed without aeration for 30 minutes.
The recommended incubation temperature is 35-45°C (95 - 113°F) dependent on the set time required.
Usage levels: This sachet (50 DCU) will inoculate 250 litres of milk.
Composition: Lactobacillus delbrueckii subsp. bugaricus, Streptococcus thermophilus on a Lactose substrate.
Storage: Shelf life is at least 12 months when stored deep frozen at -20°C (-4°F).
